 Preparation Time: 10 – 15 minutes

 Cooking Time: 8 – 10 hours

 Ingredients: 

  • 250 grams hung curd (chakka)
  • 2 tablespoons powdered sugar
  • 225 grams of strawberries
  • ½  cardamom powder (elaichi powder)
  • ½  cup fresh cream

Method: 

  1. Hang the curd (dahi) in a muslin cloth for about 2-3 hours, thereafter; refrigerate it for 2-3 hours.
  2. Make a strawberry purée by chopping some fresh strawberries, mix the sugar and grind it into a purée.
  3. Now mix the hung curd and the strawberry purée and add elaichi powder to it.
  4. Whisk it together until it turns into a thick shrikhand.

 Ingredients:

  • 6 tart shells

 For shortbread crust:

  • 1 ¾  cup all-purpose flour (maida)
  • ¾  cup salted and softened butter
  • ⅓  cup powdered sugar

 For the tart filling:

  • 1 cup heaving whipped cream
  • 8 ounces of softened cream cheese
  • ½  cup of sugar
  • 1 tablespoon lemon
  • 1 lemon’s zest

For the tart topping:

  • 1 and ½  cup diced strawberries
  • 2 teaspoon sugar

 Method:

  1. Preheat the oven to 180 degrees C.
  2. Whisk and blend the flour, butter, and sugar altogether in a food processor. 
  3. Pour the batter equally in 6 mini tart shells. By using a measuring cup, press the pastry to the bottom and up the sides of the pans. Now, pierce the bottom with the fork.
  4. Place it in a freezer for about 10-15 minutes. Once it is frozen, take it out and bake it for 20-25 minutes until it turns golden and let it cool completely.
  5. Whip the cream, empty it into a bowl. Now, whip the cream cheese and sugar together until it turns smooth. Mix up lemon juice and lemon zest to it.
  6. Now, fold the whipped cream into the cream cheese and then spread it evenly onto the tart shells. 
  7. Place the tart shells in the fridge for about 4 hours.
  8. Mix strawberries with the sugar and add it to the top of the tarts. 
  9. It’s ready to serve.

3. Strawberry Kheer

 Ingredients:

  • 3 cups of milk
  • 2 cups strawberries
  • ⅓  cup flattened rice (poha)

  • ¼  cup condensed milk
  • ¼  teaspoon cardamom powder
  • 2 tablespoons rose syrup

 Method:

  1. Place the milk on heat and keep the heat on medium flame, add poha and chopped almonds and pistachios once the milk starts boiling. Stir it well.
  2. Add cardamom powder and condensed milk to it. Let the milk simmer till the poha is well cooked. Keep stirring.
  3. Meanwhile, place another pan on medium flame and add the strawberries to it. As the strawberries ooze out the juice, add rose syrup to it.
  4. Cook it until the strawberries soften. 
  5. Let the kheer and the strawberry mix cool completely. Add strawberry mixture to the kheer.
  6. Refrigerate and serve it with some diced strawberries on top.

4. Strawberry Crêpes

You don’t have to go all the way to France to enjoy crepes. Here’s a classic crepe recipe you can try with some delicious strawberries.

 Preparation Time: 1 hour 15 minutes

Cooking Time: 12-15 minutes.

Ingredients: 

  • 1 cup of all-purpose flour (maida)
  • ¾  cup of whole milk
  • 3 tablespoons unsalted melted butter
  • 2 eggs
  • 1 tablespoon sugar
  • some diced strawberries 

Method:

  1. Blend flour, milk, eggs, butter, sugar, and 1/2 cup of water altogether. Blend it until it’s combined.
  2. Refrigerate the batter for about 1 hour.
  3. Place the pan on medium heat. 
  4. Put 1 teaspoon butter and let the butter melt over the pan.
  5. Add around 2-3 tablespoons of the batter and spread all over the pan (just like dosa).
  6. Cook both sides of the crêpe until golden brown.

  • 1 and ½ cups heavy cream

Whipped Cream:

  • 1 and ½  cups chilled heavy cream
  • 3 tablespoons sugar
  • 1 and ½ teaspoons vanilla extract
  • 1 teaspoon lemon zest

 Method:

  1. Mix strawberries and sugar. Refrigerate it for about 30 minutes.
  2. Preheat the oven to 200 degrees C.
  3. Take flour, baking powder, baking soda, remaining sugar, salt, and heavy cream, sieve them and add it to a bowl.
  4. Take an ungreased pan and add the mixture to it. 
  5. Bake it until it turns golden for about 20 minutes.
  6. Let the cake cool completely then cut it into 6 pieces and split the piece in half (horizontally).
  7. Beat sugar, vanilla extract, heavy cream, and lemon zest for about 2 minutes and keep it aside.
  8. Add the strawberries along with its juice to the bottom half of the shortcake. 
  9. Top it with whipped cream then place the top part of the shortcake over it.

 Ingredients:

  • 6 tablespoons basmati rice (soaked, drained, and blended into a fine paste along with ½  cup milk)
  • 4 cups milk with full cream
  • 1 cup of sugar
  • 10-12 strawberries (in a puréed form)
  • ½  teaspoon cardamom powder
  • some pistachios (blanched, peeled, and sliced)

Method:

  1. Boil the milk and let it be reduced until 3/4 of its actual quantity.

  3. Continue stirring for about 15 minutes. Add sugar and cardamom powder.
  4. Go on stirring till the sugar dissolves completely.
  5. Make sure no lumps are formed. If the phirni thickens add some milk to it.

  5. Then add ginger, cumin powder, rock salt, red chilli powder, and chilli flakes.
  6. If required mash the strawberries with a masher.
  7. Sauté the chutney mix until it turns thick.

  • ¾  cup milk 
  • ¾  cup chopped strawberries
  • few diced strawberries
  • 1 and ½ tablespoons brown sugar
  • Powdered sugar

Method:

  1. Preheat the oven at 180 degrees C.
  2. Whisk maida, baking powder, and salt together and set it aside.
  3. Beat egg and sugar with a hand mixer until the colour lightens.
  4. Now, add and blend vanilla extract, oil, and yoghurt to the mixture. 
  5. Start adding the flour mixture. Mix it until the mixture is fully combined.
  6. Fold in chopped strawberries into the batter.
  7. Prepare the cake pan with the oil wash and transfer the batter to it. Top it with the strawberries. 
  8. Sprinkle brown sugar on top and bake the cake at 180 degrees C which is for about 45 minutes. Prick a toothpick to check if the cake is baked.

10. Strawberry Sandesh

  • 1 cup strawberries
  • ¼  cup semolina (rava)
  • 4 tablespoons ghee
