    2. Add lots of water.

    Preparation Time: 10 minutes

    Cooking Time: 20 minutes

    Ingredients:

    • 1 cup penne pasta
    • water to boil
    • ½ teaspoon salt
    • 1 teaspoon oil
    • 1 teaspoon butter
    • 2 clove garlic (chopped)
    • 1-inch ginger (chopped)
    • ½ onion (chopped)
    • 1 cup tomato pulp
    • ¼ teaspoon turmeric (haldi)
    • ½ teaspoon red chilli powder
    • 2 tablespoons tomato ketchup
    • ½ teaspoon garam masala
    • ½ teaspoon salt
    • 2 tablespoons corn
    • ¼ capsicum (chopped)
    • ¼ carrot (chopped)
    • 2 tablespoons peas (Matar)
    • 7 florets broccoli
    • 3 tablespoons water
    • ½ teaspoon mixed herbs, basil, oregano

    Method:

    1. Sauté ginger, garlic in oil and butter, then add onion until it turns soft. 
    2. Now, add tomato pulp and sauté well till the pulp thickens.
    3. Add turmeric, chilli powder, garam masala, salt and all the vegetables. Sauté for a minute.
    4. Then, add water and simmer for about 5 minutes.
    5. Add tomato sauce, mixed herbs cooked pasta, and mix it well.
    6. Desi style penne pasta is ready to serve.

    2. Pasta In White Sauce

    This white sauce pasta is an exotic style pasta preparation with an Indian touch.

    Preparation Time: 10 minutes

    Ingredients:

    • 1 cup penne pasta (cooked)
    • ½ tablespoon oil
    • Salt as per taste
    • Water
    • 1 tablespoon butter
    • ¼ cup capsicum
    • 1 tablespoon all-purpose flour (maida)
    • 1 cup milk
    • 1 tablespoon mixed herbs
    • ¼ tablespoon chilli flakes
    • ¼ tablespoon black pepper powder
    • ¼ cup grated processed cheese

    Method:

    1. Take a large pan. Add butter and capsicum to it and roast it well. Then remove it on a plate.
    2. Then, add maida to the pan and roast for about a minute. 
    3. Now add milk and keep stirring and bring it to a boil for 2 minutes.
    4. When the mixture thickens add salt, black pepper, mixed herbs, and chilli flakes.
    5. Now add roasted capsicum and cheese to it. Cook for about 2 minutes.
    6. Add cooked pasta and mix it well.

    Ingredients:

    • 400 grams of elbow macaroni (cooked)
    • 1 cup red onion (chopped)
    • 1 cup red bell pepper (chopped)
    • 1 cup yellow bell pepper (chopped)
    • 1 cup cucumber (chopped)
    • 1 cup capsicum (chopped)
    • ¼ cup basil (chopped)
    • Salt to taste
    • 1 cup plain mayonnaise 
    • 1 cup grated parmesan cheese

    • 1 cup pasta
    • 3 pieces of chicken breasts (chopped)

    • ¼ cup green capsicum (chopped)
    • ¼ cup red capsicum (chopped)
    • ½ teaspoon red chilli powder

    1. Take a pan and heat oil. Add onion and ginger-garlic paste, tomatoes, red chilli powder, salt, and garam masala powder and sauté well. 
    2. Once the tomatoes are cooked, add capsicum cubes.
    3. Now, add chicken and sauté for a minute. 
    4. Add ½ cup water to it and mix it well. 
    5. Cook it on medium flame till the chicken is cooked well.

    5. Penne Pasta In Arrabiata Sauce

    Ingredients: 

    • 4 cup pasta penne
    • Black pepper 
    • ½ teaspoon oregano
    • 4 large tomatoes
    • Salt
    • 4 teaspoon chilli flakes
    • 2 litres of water
    • 4 tablespoon virgin olive oil
    • 2 teaspoon garlic (chopped)

    Method: 

    1. Take a non-stick pan, heat oil to it and add garlic, red chilli flakes and saute for a minute. 
    2. Blend the tomatoes into a puree and add it to the pan along with salt and pepper. Take it off the flame.
    3. Now, add oregano to the arrabbiata sauce. 
    4. Add pasta to the sauce. 
    5. Cook it for a while until the sauce coats the pasta well. 
    6. Serve the arrabbiata pasta by garnishing it with basil leaves.

    6. Tikka Masala Baked Pasta

    This preparation of pasta is when India meets Italy. This pasta sauce recipe is an Indian version of baked pasta.

    Ingredients:

    • 1 box of pasta (cooked)
    • 1 jar of marinara sauce
    • 1 cup heavy whipping cream
    • 2 tablespoons of butter
    • ½ large onion (diced)

    • 1 tablespoon of ginger paste
    • 2 tablespoons of tandoori masala
    • 2 teaspoons of cumin powder (jeera)
    • 1 teaspoon of garam masala
    • 2 tablespoons of fenugreek leaves (kasuri methi)

    • ½ cup grated parmesan cheese
    • 3 chillies
    • 1 packet of paneer
    • 2 tablespoons of yoghurt (dahi)
    • 2 tablespoons of tandoori masala
    • 2 tablespoons of oil
    • Pinch of red food colour

    Method: 

    1. Preheat the oven to 450-degrees Celsius.
    2. Take a bowl and add yoghurt, tandoori masala, oil, red food colour, and pieces of Paneer.
    3. Bake Paneer for about 6 minutes until golden brown.
    4. Now take a medium pot and melt butter, onions, sliced garlic, and ginger paste and cook it for about 5 minutes.
    5. Add tandoori masala, cumin, garam masala, and roast paneer for about 30 seconds.
    6. Add marinara sauce and let it simmer then add heavy whipping cream, kasuri methi and honey.
    7. Let the mixture simmer for about 2 minutes.
    8. Now, add pasta to the mixture and let it simmer for another 2 minutes.

    Ingredients:

    • 1 cup of chicken breast
    • 300 grams of spaghetti 
    • 1 ½ teaspoons table salt
    • ½ teaspoon turmeric
    • 1 cup onion (chopped)
    • 2 tablespoons ginger-garlic paste 
    • ¼ teaspoon Kashmiri red chilli 
    • ½ teaspoon clove
    • ½ teaspoon cinnamon
    • 1 teaspoon coriander 
    • 1 cup tomato purée or sauce
    • ½ cup of pasta water
    • ½ cup parmesan 
    • 2 tablespoons cilantro

    Method:

    1. Fry chicken with turmeric in a medium pan and mash it into crumbles for about 10 minutes.
    2. Now heat oil and add onion, ginger-garlic paste, chilli powder, cloves, cinnamon, coriander, and salt Stir.
    3. Then add the tomato sauce and let it simmer for 10 minutes.
    4. When it starts to boil, add pasta and let it cook for another 2 minutes. 
    5. Now, add the fried chicken to it and let it cook for 10 more minutes.
    6. Once done, add the reserved pasta water to it. Simmer it for a few minutes.
    7. Garnish the pasta with parmesan cheese and cilantro.

    8. Ravioli

    Ravioli is a lip-smacking authentic Italian preparation and this recipe is a must-try.

    Preparation Time: 10 minutes 

    Cooking Time: 45 minutes

    Ingredients:

    • 1 cup of all-purpose flour (maida)
    • 1 cup of semolina (rava)
    • 225 ml lukewarm water
    • 10 ml of olive oil
    • 250 grams of pumpkin (roasted with salt pepper & olive oil)
    • 2 potatoes (boiled)
    • ½ teaspoon minced ginger
    • 1 tablespoon white bread crumb
    • 1 tablespoon ricotta cheese
    • 1 tablespoon mascarpone cheese
    • 1 tablespoon grated parmesan cheese
    • A few thyme leaves
    • 1 teaspoon chives (chopped)
    • Salt 
    • Black pepper
    • 3 tomatoes
    • 6-8 basil leaves
    • 2-3 tablespoons of olive oil
    • 2 cloves of garlic
    • 2-3 tablespoons of tomato purée

    Method: 

    1. Take a bowl and add maida, rava, salt, olive oil and water. Knead it into a semi-stiff dough. Let it rest for 30 minutes.
    2. Now, mash pumpkin and potatoes and add salt, pepper, ginger, chives, breadcrumbs, ricotta cheese, mascarpone cheese, and Parmesan cheese. Refrigerate it for a few minutes.
    3. Roll out half of the dough about 2 cm thin. You can use a ravioli cutter to make an outer shell and brush milk onto it.
    4. Brush a little milk on the ravioli shells.
    5. Pour the filling in a piping bag and put the filling in the pasta.
    6. Now, fold the pasta into the shape of a crescent and refrigerate it.
    7. Meanwhile, blend tomatoes, garlic, basil leaves, chilli flakes, salt, and olive oil into a thick paste. 
    8. Take a pan, add olive oil and sauce and cook it for a few minutes. 
    9. Cook Ravioli in salted water for a few minutes.
    10. Once Ravioli is cooked, add it to the sauce.
    11. Garnish Ravioli with Parmesan cheese, black pepper, and basil leaves.

    9. Broccoli Pesto Pasta

    • 2 cups broccoli florets
    • 2 cups pasta (cooked)
