1. Wash and chop 5 to 6 medium to large tomatoes and put them in a blender to make a smooth puree

2. Heat ¼ cup olive oil in a skillet. Next, add 2 teaspoons of minced garlic

3. Sauté garlic for only 5 to 6 seconds on a low heat to ensure that it does not turn brown

4. Mix the tomato puree from the blender and mix well

5. Sauté for 4 to 5 minutes on low or medium-low heat

6. Add salt as per your taste and blend well again

7. Cover the skillet and let the tomato simmer for 25 minutes on low heat. Don’t forget to check and stir at regular intervals

8. If the sauce starts striking to the bottom of the skillet, add ¼ cup water and mix well. Then continue to cook covered

  1. For the pizza base recipe, mix yeast with sugar and one teaspoon warm water and set aside until frothy. Add frothy yeast to a mixture of whole wheat flour and soy flour. Add salt, olive oil and wheat bran.
  2. Add water and knead into a soft pizza dough. Leave the pizza dough covered with a damp cloth in a warm place for about 45 minutes or until the dough is about double in volume.
  3. Divide pizza dough into four, roll out each portion into medium-thick eight-inch discs. Prick with a fork all over. Preheat the oven to 220°C.
  4. For the sauce, heat olive oil in a pan, add chopped onion and garlic, stir-fry briefly and add chopped tomatoes.
  5. Add one cup of water and bring it to a boil. Stir in basil leaves, salt and crushed dried red chillies. Simmer for about five minutes on medium heat or till it reaches a thick dropping consistency.
  6. Spread the prepared sauce on the rolled pizza base, top it with sliced onion, sliced mushrooms, tomato and green capsicum strips.
  7. Finally, sprinkle grated low-fat mozzarella cheese to evenly cover the pizza top. Brush with olive oil.
  8. Place it on a greased ovenproof tray and bake in the preheated oven at 220°C for about twenty minutes or until the pizza base is crisp and the cheese melts and starts bubbling.
  9. Remove from the oven, sprinkle with dried oregano, cut into six or eight pieces and serve hot.

  1. Place the flour on a clean surface. Make a hole in the centre and pour in the water. Add the yeast to it and knead the mixture.

For Mushroom Topping:

  • 100 ml of water
  • 50 grams of mushrooms
  • 1 tbsp of extra virgin olive oil
  • Onions
  • 1 tbsp of salt
  • 1/2 tbsp of black pepper
  • Red chilli (lal mirch)
  • Garlic
  • Fresh oregano leaves
  • 1/4 cup of mozzarella cheese


Prepare the Pizza Dough:

  1. Take a lukewarm glass of water and mix 2 teaspoons of sugar.
  2. Take a tablespoon of active yeast and sprinkle it on top of the water, cover the glass and put away in a draught free zone. You will see bubbles arise on the surface in 20 minutes or so.
  3. Take another bowl, add two cups of whole wheat flour, one cup of ready to eat oats, maize flour, flax seed powder and some sunflower seeds. Now add the fermented yeast water. Mix the dough and add a tablespoon of olive oil.
  4. Knead the dough a bit till it looks shiny. It will feel hard to the touch.
  5. Take a glass bowl and grease it with olive oil, now put the kneaded dough in it, and cover it with a muslin cloth.

Prepare Pesto Sauce:

  1. Take one and half spoon of garlic, some pine nuts and churn them in a mixer.
  2. Now add two cups of basil leaves and add 1 cup of extra virgin olive oil to it and churn it some more.
  3. Add salt and pepper to the mixture. Add a cup of grated Parmesan cheese to this.
  4. Mix the above and take it out in a bowl. Now add some olive oil to it. The Pesto Sauce is done.

Prepare Mushroom Topping:

  1. In a pan, roast whole garlic with red chillies and olive oil.
  2. Take some porcini mushrooms and soak them in warm water. Take a pan, add some extra virgin olive oil and then add onions and fry.
  3. To the caramelized onions add the porcini mushrooms and regular mushrooms.
  4. Add some salt and fresh pepper and then add the roasted garlic pods and then add some fresh oregano leaves.
  5. Put the pizza together.
  6. Take chillies infused in olive oil and apply them on the edges of the base.

  8. Put the pizza in the oven at 180 degrees till the cheese melts.

  2. Heat the oil on medium heat in a frying pan or wok. Add the chicken and fry for 8 to 10 minutes.
  3. Tip in the ginger and garlic and mix for a couple of minutes. Stir in the pasta sauce or tomatoes and soy sauce. Mix in the chilli powder.
  4. Spoon the mixture onto the pizza base. Sprinkle it with onion and cheese.

  1. To make the dough, mix maida, salt, sugar, baking soda, baking powder, oil, mixed herbs and curd together. And knead a soft dough adding milk. Keep the dough aside and let it rest for 2 hours.
  2. When the dough is rested enough, take it out of the bowl and knead it again for 2 minutes.
  3. Now roll out the dough as per the size of your pizza pan and place it inside the pan.
  4. Spread the cheese on the rolled out dough evenly. Now take another dough ball and roll it very thin and cook it on a tawa. Then place it above the cheese spread and seal the edges using the base. Prick the base with a fork.
  5. Now spread the sauce, add all the toppings and mozzarella cheese. Also add some salt, mixed herbs and chilli flakes as per your taste.
  6. Preheat your oven for 10 minutes at 180°C.
  7. Now cook the pizza at 180°C for 15-20 minutes.

Proving The Dough:

  1. Place the dough in a bowl and drizzle generously with extra virgin olive oil.
  2. Cover bowl with cling film and place in a warm area to prove for 50 minutes.
  3. After the dough is proved, bash the air out and cut into small pieces for individual pizzas.
  4. Dust the work surface and rolling pin with some flour before rolling out the dough.

Prepare The Topping:

  1. Preheat the oven at its highest mark and flour your baking tray.
  2. Now, using a rolling pin, roll out the freshly made pizza dough and place it on the tray.
  3. Spread a thin layer of passata sauce and cover with mozzarella cheese and sprinkle basil leaves.
  4. Put the tray into the oven for 10 to 12 minutes.
  5. After the pizza is baked remove it from the oven and drizzle extra virgin olive oil and some pepper.
  6. Garnish with fresh basil and cut into slices.

Prepare Pizza Base:

  1. Mix the flours, add 3 tsp of oil and salt and make a soft dough with water.
  2. Roll out thin rounds and deep fry in oil till crisp.

  1. Soak the beans overnight, boil and drain.
  2. Keep the liquid aside and mash the beans.
  3. Heat ghee and butter together. Saute the onions till transparent. Add the beans and mix well. Stir in the puree, ketchup and salt. Cook till the colour darkens, keep mashing the mixture as it cooks.
  4. Keep aside.

Prepare Hot Sauce:

  1. Soak the chillies in half a cup of water.
  2. Saute the onions in the oil and add the tomatoes and chillies with the water. Cook till the tomatoes are done, cool and blend it in a mixer.
  3. Then heat the sauce again. Add the ajwain, sugar and salt. Cook for another 10 minutes and keep aside.

Prepare The Garnishing:

  1. Take the fried pizza and spread some rajma, jalapenos and sauce.
  2. Sprinkle some onions and spread a spoonful of sour cream.
  3. Finally, sprinkle the cheese and grill for five minutes.
