1. Ukadiche Modak

Preparation time: 30 minutes

Cooking time: 15 minutes

Ingredients:

  • 1 cup rice flour
  • 1 cup water
  • 1/2 teaspoon salt
  • 1 cup grated coconut
  • 1 cup jaggery, grated
  • 1/2 teaspoon cardamom powder
  • Oil or ghee, for greasing

Instructions:

  1. Bring the water to a boil in a saucepan.
  2. Add the rice flour and salt, and stir until the mixture comes together into a dough.
  3. Cover the dough and let it rest for 10 minutes.
  4. Combine the coconut, jaggery, and cardamom powder in a pan.
  5. Cook over low heat, stirring constantly, until the jaggery melts and the mixture comes together.
  6. Divide the dough into small balls.
  7. Place a ball of dough in the palm of your hand and flatten it into a disc.
  8. Place a teaspoon of the filling in the centre of the disc.
  9. Fold the disc over the filling and seal it tightly.

  • 1 cup grated coconut

  • Oil, for frying
