With the right ingredients, patience and perfect ice cream recipes, the world is your ice cream parlour. All you have to do is pick which one to make first.

1. Vanilla Ice Cream

An epic and classic, vanilla ice cream recipe that is loved by all. This vanilla ice cream recipe can be used as a base for your milkshakes and also dressed with your favourite toppings. 

Prep time: 15 mins

Freeze time: 9 hours

Ingredients:

  • 500 ml full cream milk 
  • 1 vanilla bean 
  • ½ cup of sugar 
  • 300 ml fresh cream 

Method:

  1. Boil the milk 
  2. Scrape the seeds from the vanilla bean. Once the milk comes to a boil, add the vanilla seeds and stir well 
  3. Let it simmer for 10 mins 
  4. Add sugar and stir it. Let the milk boil till it is condensed 
  5. Leave it aside and cool it 
  6. Take fresh cream in a bowl, whip it for 1 minute 
  7. Add the condensed milk to it 
  8. Whip it again for another minute 
  9. Freeze it for 1 hour 
  10. Take it out and whip it again
  11. Transfer the mixture to a tub and freeze it for 8 hours
  12. Scoop it and serve it.

Ingredients: 

  • 1 can of sweetened condensed milk
  • 2 cups of heavy cream, cold
  • ½ cup cocoa powder, unsweetened
  • Mini chocolate chips (extra for topping if desired)

Method:

  1. Place cold heavy cream in a large bowl, and whip to stiff peaks.
  2. Add cocoa powder, sweetened condensed milk and beat on low speed until incorporated.
  3. Transfer into a container/dish, and freeze for at least 6 hours.
  4. Scoop and serve in a bowl topped with chocolate chips. 

3. Oreo Ice Cream 

Enjoy your regular Oreo biscuits with a twist, make it an Oreo ice cream sandwich! Just like a biscuit but ice creamy!

Ingredients:

  • 1 tub of vanilla ice cream
  • 20 oreo biscuits 

Method: 

  1. Crush 10 of your Oreos and keep them aside.
  2. Melt your vanilla ice cream and add the crushed Oreos.
  3. Fold gently and place it in the freezer for 8 hours or overnight.
  4. Remove your ice cream and, using a cookie cutter, cut the circles of your ice cream.
  5. Place the cut ice cream in between your leftover Oreo cookie. 
  6. And voila! Your Oreo ice cream sandwich is ready!

4. Banana Ice Cream

A popular and healthy ice cream made without cooking cream, sugar, and more importantly without any ice cream machine. The Banana ice cream is the perfect guilt-free dessert. 

Prep time: 10 mins

Freeze time: 4 hours 

Ingredients: 

  • 3 bananas, ripened
  • 1 tsp vanilla extract
  • 3 tbsp honey

Method: 

  1. Firstly, peel the skin and slice 3 bananas.
  2. Transfer the sliced banana into a zip lock bag.
  3. Freeze for 3 hours or until it turns hard.
  4. Now transfer the frozen banana into the mixer or food processor.
  5. Pulse and blend into a thick paste without adding any water or milk.
  6. Add 1 tsp vanilla extract and 3 tbsp honey.
  7. Blend again until it turns into a silky smooth texture.
  8. Transfer the mixture to an airtight container and freeze for 3 hours. you can also serve immediately, however, the ice cream will be soft.

5. Coconut Ice Cream

Ingredients:

  • 1 cup whipping cream
  • 1¼ cup tender coconut water
  • 4 tender coconuts pulp 
  • ¾ cup of coconut milk
  • 1 cup of sugar
  • ½ condensed milk
  • Chopped tender coconut

Method:

  1. In a mixing bowl, add the whipping cream and whip it using a hand mixer or a whisk until stiff peaks.
  2. Add about ½ cup of tender coconut water and meat from 3 tender coconuts to a blender and blend to a smooth paste.
  3. Chop meat from 1 tender coconut into small pieces and keep aside.
  4. To the whipped cream, add powdered sugar, and mix well. Then incorporate – condensed milk, puree of tender coconut water & meat.
  5. Fold in the remaining ¾ cup of tender coconut water along with ¾ cup of coconut milk to the mixture.
  6. And then add the chopped tender coconut meat, & transfer the ice cream into a bigger bowl(if necessary) and freeze the ice cream for a minimum of 6 hours.
  7. Stir the ice cream after the first two hours so that the tender coconut meat chunks are well distributed around the ice cream.
  8. After the ice cream is frozen, scoop it out, serve & beat the heat!

6. Mango Ice Cream

  • 1 cup of mango pulp/ puree 
  • 1 cup of chilled cream 
  • 1 pinch of cardamom powder (elaichi)

Method:

  1. Squeeze lemon, cardamom and condensed milk into the mango puree. 
  2. Mix sugar and cream and whip them till the cream gets to the soft peak stage. 
  3. Now gently fold the mango pulp into the whipped cream till they are evenly mixed.
  4. Pour into mould and freeze it till the ice cream firms up.

7. Butterscotch Ice Cream

Ingredients:

For A Sweet And Crunchy Praline:
  • 2 tbsp water
  • 1 tsp butter
  • 2 tbsp cashew (kaju)
For Ice Cream:
  • 2 cups heavy cream
  • 3 drops of yellow food colour
  • 1 cup condensed milk/milkmaid
  • 1 tsp butterscotch essence

Method: 

For Praline: 
  1. Firstly, in a pan take ½ cup jaggery and 2 tbsp water.
  2. Stir and dissolve the jaggery keeping the flame on medium.
  3. Once the jaggery melts, add 1 tsp butter and give a good mix.
  4. Boil for 6-7 minutes or until the syrup turns frothy. check the consistency, by dropping syrup into a bowl of water, it should form a hardball and cut with a snap sound. else boil for another minute and check.
  5. Add 2 tbsp cashew and give a good mix.
  6. Pour the mixture over a greased plate and allow it to cool completely.
  7. Break into pieces and transfer to a zip lock bag.
  8. Crush the praline into pieces. keep aside.
For Ice Cream Preparation: 
  1. Firstly, in a large bowl take 2 cups of heavy cream and 3 drops of yellow food colour.
  2. Beat on low speed. you can also use a whisk to beat the cream.
  3. Beat until stiff peaks are formed.
  4. Now add 1 cup condensed milk and 1 tsp butterscotch essence. If you do not have access to butterscotch essence, you can use vanilla extract.
  5. Beat and mix until everything is well combined.
  6. Further, add 3 tbsp of prepared praline and mix gently.
  7. Transfer the ice cream mixture to a glass box.
  8. Top with a few praline pieces and cover tight.
  9. Now freeze for 8 hours or until it sets completely.
  10. Finally, enjoy butterscotch ice cream with tutti frutti.

8. Avocado Ice Cream

Avocado ice cream anyone? It’s super-rich and creamy. And takes 4 ingredients to make! 

Prep time: 10 mins

Freeze time: 6 hours

Ingredients:

  • 2 large avocados, ripe
  • 1 tablespoon of fresh lemon juice
  • 1 can of sweetened condensed milk
  • 2 cups (480ml) heavy cream

Method

  1. Cut avocados in half, remove the seeds and scoop out the flesh.
  2. In a food processor/ blender add avocados, lemon juice and sweetened condensed milk. Process until very smooth.
  3. In a large bowl whip heavy cream until stiff peaks.
  4. Add the avocado mixture to the whipped cream. Gently fold until no white streaks remain.
  5. Transfer to a freezer container, and freeze for at least 6 hours.

9. Red Velvet Ice Cream

Don’t throw your leftover red velvet cake away. Turn it into a bowl of delicious red velvet ice cream in just a few steps!

Prep time: 10 mins

Freeze time: 8 hours

Ingredients: 

  • 1 bar cream cheese, softened
  • 3 cups heavy cream, chilled
  • 1 tsp. pure vanilla extract
  • 1 can of sweetened condensed milk
  • ½ baked red velvet cake, crumbled

Method:

  1. In a stand mixer fitted with a whisk attachment, beat cream cheese until fluffy. 
  2. Add heavy cream and vanilla and beat until stiff peaks form.
  3. Fold in sweetened condensed milk until fully combined, then add almost all the crumbled red velvet cake (reserving some for garnish).
  4. Transfer to a 9″-x-5″ loaf pan and sprinkle with more crumbled cake. 
  5. Freeze until solid, 5 hours, or preferably overnight.
  6. Scoop your red velvet ice cream and serve immediately.

10. Cookies And Cream Ice Cream

Prep time: 15 mins

Freeze time: 6 hours 

Ingredients:

  • 12-14 Oreo biscuits
  • 2 cups of heavy cream or whipping cream
  • 1 cup of condensed milk
  • 1 tsp of vanilla extract

Method:

  1. Crush the Oreo biscuits and keep them aside.
  2. In a cold bowl, add heavy cream or whipping cream and whisk until it forms stiff peaks. Make sure to use a cold bowl and whisk
  3. Add the condensed milk, vanilla extract and mix well
  4. When nicely incorporated add the crushed Oreos and mix
  5. Pour the mixture into a mould, cover it with wrapping paper and refrigerate for 6 hours or overnight. 
  6. Scoop in a bowl and enjoy! Your cookies and cream ice cream are ready!
