Ingredients:

  • 250 gms ripe mangoes, diced
  • 250 gms full-fat curd (dahi) (vegans can also use vegan curd)
  • 50 gms sugar
  • ⅓ teaspoon cardamom (elaichi) powder
  • Ice cubes 
  • Sliced cashew (kaju) and pistachio (pista), for garnish 

Method:

  1. Take a dry, clean blender and add in the mangoes, curd, sugar, cardamom powder and ice cubes.
  2. Blend until smooth. Make sure no lumps of mango remain.
  3. Pour it out in a glass and garnish generously with cashews and pistachios.
  4. Serve the mango lassi immediately or cool in the fridge before serving. 

2. Mango Shake

Probably the most recognisable mango recipe for Indians is mango shake. Learn how to make it yourself with this easy recipe.

Preparation Time: 5 minutes

Cooking Time: 2 minutes 

Ingredients:

  • 250 gms ripe mangoes, diced
  • 250 ml full-fat milk, preferably cold
  • 50 gms sugar
  • Ice cubes
  • Almond (badaam), cashew (kaju), pistachio (pista), thinly sliced 

Method: 

  1. In a clean blender, add the mangoes, milk, sugar and ice cubes.
  2. Blend till a smooth consistency is achieved. You can adjust the sugar depending on the sweetness of the mangoes. 
  3. Once blended, mix in some of the sliced dry fruits with the mango shake.
  4. Pour in a glass, garnish with the remaining dry fruits, and serve cold. 

Tip: For a little extra flavour, top off your mango shake with a scoop of vanilla or mango ice cream.

3. Mango Chilli Sorbet

Here is a recipe that puts a spicy twist on the sweet and delectable mango ice cream. It is sure to be a star at your next brunch party!

Preparation Time: 5 minutes

Cooking Time: 5 hours

Ingredients:

  •   300 gms ripe mangoes, chopped
  •  Juice of ½ lime
  • ½ teaspoon chilli powder
  • A pinch of salt
  • 150 gms coconut cream
  • 1 teaspoon honey 

Method:

  1. Place the chopped mangoes evenly on a baking sheet lined with paper and freeze for 2-3 hours.
  2.  Once frozen, add the mangoes, along with the lime juice, coconut cream and honey into a blender and blend till smooth. You can keep adding a few spoons of warm water to achieve the right consistency.
  3. Transfer the mango ice cream blend into a baking tin lined with parchment paper and sprinkle with a pinch of chilli powder and salt.
  4. Freeze the mixture for 1-2 hours.
  5. Scoop and serve. 

Tip: You can garnish with some thinly sliced kairi (unripe mangoes) and a pinch of chilli powder for an extra kick.

4. Mango Kulfi

Kulfi, India’s own version of ice cream, can be modified in as many flavours as you like. Here is the mango kulfi variant for a special hot-day treat.

Preparation Time: 5 minutes

Cooking Time: 10 minutes 

Ingredients:

  • 1 ripe mango, chopped
  • 200 ml fresh cream
  • 3 tablespoon condensed milk
  • 2 tablespoon milk powder
  • A pinch of salt
  • ⅓ teaspoon cardamom (elaichi) powder

      For Garnish:

  • Pieces of fresh mango
  • Dry fruits
  • Saffron (kesar)

Method:

  1. Add the chopped mango, salt and cardamom powder to a blender and make a smooth puree.
  2. In a bowl, pour out the puree and mix it in with the fresh cream, condensed milk and powdered milk. Mix till the mixture is lump-free.
  3. Get your kulfi mould ready and pour out the mixture in it. Before pouring in the mixture, you can put some dry fruits in the empty mould and then pour in the mix.
  4. Freeze overnight. To de-mould, roll in your hands to warm the mould or dip in some water.
  5. Garnish with dry fruits, saffron or more chopped mangoes. You can serve it on the stick or cut it in pieces and serve on a dish.

Tip: You can DIY your kulfi mould using styrofoam cups. Pour in the kulfi mixture and seal the top with aluminium foil. For kulfi-on-stick, put an ice cream stick through a small slit in the foil.

5. No-Oven Mango Cake

For all birthdays and anniversaries this season, ditch the usual chocolate cake. Try out this no-oven recipe for a soft, fluffy, seasonal mango cake.

Preparation Time: 20 minutes

Cooking Time: 30-45 minutes

Ingredients:

  • 300 gms refined flour (maida)
  • 100 gms powdered sugar
  • 50 ml of refined oil
  • 1 ripe mango, chopped and pureed
  • 100 gms sugar
  • 200 ml full-fat milk
  • 1 ½ teaspoon baking powder
  • Vanilla essence
  • A pinch of salt

 Method:

  1. Put a saucepan on medium flame and add in the mango puree and sugar. Heat the mixture, while constantly stirring, till the ingredients combine. Then set it aside to cool.
  2. Grease a 6-inch cake tin and dust it with some flour.
  3. In a large bowl, mix the powdered sugar, oil, few drops of vanilla essence, and milk.
  4. Next, add the dry ingredients (maida, baking powder) by sifting them and folding them into the mixture.
  5. Add the mango puree prepared in step 1 to the batter and fold till everything is combined. Do not over-mix as that may prevent the cake from rising.
  6. Pour the batter in the cake tin. For the baking setup, place a metal stand in a deep pan and pre-heat for 15 minutes. Then place the cake tin on the stand and cover the setup with a lid. Let it cook for 30-45 minutes.
  7. After that, check if a toothpick or knife comes out clean when stuck in the cake. If yes, the cake is ready. Carefully de-mould, slice and enjoy.

6. Mango Cheesecake

Can’t go to your favourite café for a dessert in the scorching sun? Don’t worry! Here is a quick and easy recipe to a café-style mango cheesecake at home.

Preparation Time: 20 minutes

Cooking Time: Nil

Ingredients:

For Base:

  • 100 gms digestive biscuits
  • 2 tablespoon butter, melted

For Filling:

  • 125 gms cream cheese
  • 40 gms powdered sugar
  • 80 gms mango pulp
  • 150 gms whipped cream
  • 1 ripe mango

Method:

  1. Crush the digestive biscuits into fine crumbs. Then mix them well with the melted butter.
  2. Take out the mixture in a cake tin or any flat base surrounded by a cake ring. Press it down firmly with the back of a small bowl so that it makes an even layer. Freeze the setup for 15 minutes.
  3. Till then, prepare the filling. Take the cream cheese, sugar and some of the mango pulp in a bowl and whisk it together.
  4. Next, fold in the whipped cream, half at a time. Fold till all ingredients are combined.
  5. Take out the frozen base and add the filling on top. Spread it evenly with a spatula.
  6. Slice up a ripe mango in any shape you like to decorate the top of the cheesecake. And voila! Your café-style mango cheesecake is ready.

Preparation Time: 20 minutes

Cooking Time: 5-6 hours

Ingredients:

  • 4 ripe mangoes, chopped
  • 50 gms sugar
  • 100 ml of water
  • 5 gms agar
  • 100 gms fresh cream
  • 50 ml of milk

Method:

  1. Add the chopped mangoes along with the sugar in a blender to make a smooth puree.
  2. Strain the puree into a pan and heat it over medium flame.
  3. Meanwhile, boil the water and add the agar to it. This will thicken the pudding. Agar should dissolve completely.
  4. Strain the agar into the mango puree and combine.
  5. Next, turn off the heat and add in the fresh cream and milk. Stir to combine.
  6. Take some shallow glasses and pour the mixture in them. When it comes to room temperature, cover the glasses with foil and refrigerate (5-6 hours or overnight).

Ingredients:

  • 2 ripe mangoes, chopped
  • 20 gms custard powder (vanilla flavour)
  • 100 gms sugar
  • 200 gms fresh cream
  • ½ litre milk
  • Fresh seasonal fruits, chopped

 Method:

  1. Make a slurry by mixing the custard powder with some milk. Add it to the rest of the rest of the milk and cook for 6 minutes.

  3. Add ¼ chopped mangoes, along with sugar, into a blender and make a puree.
  4. Next, whip the fresh cream till it is thick.

  6. Put the bowls in the fridge to set for 1 hour and then serve.
