1. Green Shakshuka

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 1 chopped onion
  • 2 minced garlic cloves
  • 1 jalapeño, seeded and minced
  • 1 bunch of spinach
  • 1 tsp dried cumin
  • ¾ tsp coriander
  • Salt and freshly ground black pepper
  • ½ cup vegetable broth
  • 8 large eggs
  • Chopped fresh parsley (to taste, optional)
  • Chopped fresh coriander leaves, to taste
  • Red-pepper flakes

Technique

  1. Preheat the oven to 350°F.
  2. Place a large skillet on medium heat and warm up the olive oil.
  3. Add the onion and saute for 4 to 5 minutes, or until tender. Next, add jalapenos and garlic and saute for 1 more minute.
  4. Cook the spinach for 4 to 5 minutes, or until it wilts completely.
  5. Add coriander, cumin, pepper, and salt, and cook for a minute or until you get a whiff of its aroma.
  6. Pour into a mixer and blend it to get an even puree. Add the broth into the mixer and blend once more.
  7. Pour the above mix back into the pan and make 8 small circular gaps at regular intervals.
  8. Now, crack the eggs and empty each of them out into the gaps you’ve just made.
  9. Place the pan in the oven and let it stay for 20 to 25 minutes or until the egg whites are well-cooked.
  10. Garnish with coriander leaves, parsley, and red pepper flakes, and serve hot.

2. Breakfast Casserole

Preparation Time: 10 minutes

Cooking Time: 1 hour 15 minutes

Ingredients

  • 1 tbsp olive oil
  • ½ yellow onion chopped
  • 2 cloves garlic minced
  • 18 large eggs
  • ½ cup milk
  • 1½ cups shredded mozzarella cheese
  • 1 cup halved grape tomatoes
  • 1 cup roughly chopped basil
  • 1 tsp kosher salt
  • ¼ tsp black pepper

Technique

  1. Preheat the oven to 350°F.
  2. Place the pan on medium heat and warm it up. Add the onion and cook for 2 minutes or until it turns transparent and tender. 
  3. Next, add garlic and cook for 2 minutes.
  4. Whisk the eggs in a large mixing bowl and then whisk in the milk. Stir in the onions and garlic thoroughly.
  5. Stir in half of the shredded cheese, basil, tomato, salt, and pepper.
  6. Pour the egg into the pan.
  7. Sprinkle the remaining ½ cup shredded cheese evenly all over the top.
  8. Place the pan in the oven and bake for 45 to 50 minutes, or until the eggs become firm on the surface and turn golden brown slightly.
  9. Let this sit for 10 minutes before you cut them out into equal, square portions. 
  10. Season with pepper and salt, and serve fresh for Mother’s Day brunch.

3. Spicy & Creamy Achari Mushroom Open Toast

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Ingredients

  • 1 tbsp herbed butter (possibly flavoured with garlic)
  • 4 pieces of bread
  • 200 gms button mushrooms 
  • 1 finely chopped onion
  • 4-5 finely chopped spring onion greens
  • 2 finely chopped cloves of garlic
  • 1 inch finely chopped ginger
  • 1 tbsp flavoured mayonnaise 
  • Salt to taste, if required

Techniques

  1. Warm the butter in a hot skillet and then add ginger, garlic, and chopped onions. 
  2. Mix the onions and spring onions, and saute until the mushrooms become lightly cooked.
  3. Then, stir in the mayo thoroughly
  4. Add salt to taste, if required.
  5. Toast the pieces of bread and spoon the mixture over them, and, voila, a lavish brunch will be ready in minutes.

4. Mango Ginger Mojito

Preparation Time: 5 minutes

Cooking Time: 2 minutes

Ingredients

  • 200 gms chopped mango
  • 400 ml mango juice
  • 5-6 pudina (mint) leaves sprigs
  • 20ml ginger juice
  • 2-3 lemon wedges
  • 400 ml club soda / sparkling water
  • Ice cubes

Technique

  • 500 ml milk
  • 400 gms condensed milk
  • 300 ml fresh cream
  • 2 tbsp rose water
  • 2 tbsp orange zest
  • 6 tbsp corn flour
  • 30 bread rusk
  • ¼ cup chopped pistachios 

Techniques

  1. Take a square dish and spread an even layer of toasted bread rusks in it.
  2. For preparing the syrup, take water in a pan and pour sugar and lemon into it, and place the pan on medium heat.
  3. Once the sugar has melted completely in the water, add rose water and orange rind. Keep the water aside, allowing it to cool down a bit.
  4. Pour the syrup onto the break rusk so the former gets soaked in completely.
  5. Place another layer of the bread rusk until the syrup gets soaked in entirely again.
  6. Now, to make the custard, mix cream, milk, cornflour, and condensed milk. Keep stirring the mixture until the consistency has thickened.
  7. Keep it aside for it to cool down slightly and then pour the soaked bread rusk.
  8. Refrigerate it once it has reached room temperature and garnish with the chopped pistachios on the surface.
