  • 8 to 10 slices of bread (white bread or brown bread or whole wheat bread)
  • 1 tbsp of butter 
  • ½ cup of grated cheddar cheese

  • 1 tbsp of roasted cumin powder (jeera)
  • 1 tbsp of chaat masala 

Method:

  1. First, grate the cheese and keep it aside. Then spread butter on each slice.
  2. Then top half of the bread slices with grated cheese.
  3. Sprinkle two to three pinches of black pepper powder, cumin powder and chaat masala on each slice which is topped with grated cheese.
  4. Cover the cheese-topped slices with the remaining buttered pieces of bread.
  5. Spread butter on top of each slice.
  6. On a heated grill place the sandwich carefully with the buttered side facing down.

Ingredients:

  • 200 grams of paneer – crumbled (cottage cheese)
  • 2 tbsp of curd (yoghurt)
  • 1 pinch of turmeric powder (haldi)
  • ¼ teaspoon of cumin powder (jeera)
  • ½ teaspoon of Kashmiri red chilli powder
  • ½ teaspoon of coriander powder (dhaniya)
  • ½ teaspoon garam masala powder
  • ½ teaspoon of dry mango powder (amchur powder)
  • Salt as required
  • 1 medium-sized onion, thinly sliced in rounds 
  • 1 thinly sliced red bell pepper 
  • Chaat masala as required
  • Green chutney or sandwich chutney as required
  • Butter as required
  • 10-12 bread slices – whole wheat or brown or multigrain or white bread

Method:

  1. Crumble 200 grams of paneer in a bowl or pan. 
  2. Do not crumble finely. Some small chunks of paneer are fine. You can even chop paneer into small cubes instead of crumbling.
  3. Add the following spice powders: 1 pinch of turmeric powder, ¼ tsp cumin powder, ½ tsp Kashmiri red chilli powder, ½ tsp coriander powder, ½ tsp garam masala powder, ½ tsp dry mango powder (amchur powder).
  4. Add 2 tbsp of curd (yoghurt or dahi). Also, season with salt.
  5. Mix very well.
  6. Take the bread slices and spread some butter on them. 
  7. Spread sandwich chutney on the slices. 
  8. Now place some thin onion slices and sliced bell pepper. 
  9. Sprinkle some chaat masala on top. Place the paneer stuffing. 
  10. Cover with the remaining bread slices on which both butter and sandwich chutney has already been spread.
  11. Place the paneer sandwiches in a preheated sandwich maker. Grill until crisp and golden.
  12. Remove and serve paneer sandwiches hot or warm with any dip or sauce of your choice.

Method:

  1. Heat a non-stick pan.
  2. Break eggs into a bowl, add salt and whisk well. Add milk and whisk again. Add mayonnaise and mix well.
  3. Pour egg mixture into the hot pan and cook, stirring continuously, till the eggs are scrambled and cooked. Transfer the scrambled eggs to a bowl.
  4. Roughly chop boiled eggs in a chopper and add them to the scrambled eggs.
  5. Finely chop lollo rosso lettuce leaves and add to the same bowl. Add salt and crushed peppercorns and mix well.
  6. Place iceberg lettuce on 4 bread slices, spread egg mixture over them, top with a cheese slice and cover each sandwich with remaining bread slices.

  1. Trim the bread with a round cutter. Butter each round.
  2. Flake fish, stir in hung curd, rind, cheese and seasoning. Spread over the bread.
  3. Top with remaining slices and press firmly together.
  4. Beat eggs, milk, oil and Kashmiri mirch together. Season.
  5. Dip sandwiches in egg and shallow fry in hot oil until golden.

  • 4 slices of ham 
  • 8 tbsp of mozzarella cheese grated 
  • 4 slices of brown bread 
  • 8 teaspoons of butter for sealing and brushing
  • Crushed black peppercorns to taste (kali mirch)
  • 4 teaspoons of red chilli flakes (lal mirch)

Method:

  1. Preheat the oven to 180ºC.
  2. Place bread slices on a worktop. Spread 2 tsp of butter on each slice. Sprinkle crushed peppercorns and ½ tsp red chilli flakes on top of each slice.
  3. Place chicken ham slices on each slice. Sprinkle crushed peppercorns and ½ tsp red chilli flakes on each slice.
  4. Top with 2 tbsp of grated cheese on each sprinkle some more red chilli flakes and crushed peppercorns on top.
  5. Brush a baking tray with butter and place the sandwiches on it. Put the tray in the preheated oven and let the cheese melt.
  6. Cut into small squares and serve hot.

7. Avocado Sandwich

  1. To prepare the spread, take mayonnaise in a bowl. Add mustard paste and honey and mix well.
  2. Apply some prepared spread on 1 bread slice. Place tomato roundel, cucumber roundels and sprinkle some salt and crushed peppercorns on top.
  3. Apply some spread on another bread slice and place it spread side down over the cucumber roundel. Apply some cream cheese on top and place avocado slices and onion roundels on top. Sprinkle some salt and crushed peppercorns on top.
  4. Apply some cream cheese on a third bread slice and place it cheese side down over the avocado slice. Similarly, prepare with remaining bread slices.
  5. Serve the sandwiches with banana chips, tomato ketchup and the remaining spread. They can be packed in a tiffin box to take to the office too.

8. Falafel Sandwich

  • Baking soda a pinch

  • 1 tsp of lemon juice 
  • ¼ tsp of black pepper powder (kali mirch)
  • 1 tbsp of sliced white onion 
  • 10-12 mint leaves (pudina)
  • A pinch of roasted cumin powder (jeera)
To Serve
  • 2 whole-wheat pita bread 
  • 1 medium sliced tomato
  • 1 small sliced onion 
  • A few mint leaves 
  • A few black olives 
  • A few pickled cucumbers

Method:

  1. Preheat the oven to 200 ºC. Mix chickpeas, parsley, onion, garlic, crushed coriander seeds, roasted cumin powder, baking soda, lemon juice and salt in a bowl.
  2. Grind in a mixer without water. Add 1 tbsp olive oil and grind to a coarse paste resembling bread crumbs. Heat sufficient oil in a deep non-stick pan.
  3. Meanwhile, make the tahini sauce: mix mayonnaise, salt, lemon juice, pepper powder and onion. Chop mint leaves and add.
  4. Add tahini and mix well. Add 2 tbsp warm water and roasted cumin powder and mix well.
  5. Slice the pita bread into two horizontally. On each piece place a few tomato slices, a few onion slices and mint leaves. Sprinkle salt and lightly toast them in the preheated oven for 3-4 minutes.
  6. Shape the falafel mixture into round tikkis and deep fry in the hot oil till golden and crisp. Drain on absorbent paper. Remove the pita slices from the oven and arrange them on a serving platter.
  7. Place a few fresh mint leaves on each, followed by a little tahini sauce, over this place a falafel, sprinkle a little roasted cumin powder and serve with black olives and pickled cucumbers.

9. Pinwheel Sandwiches

Bread roll sheets stuffed with ketchup, mayonnaise and rolled. Pinwheel sandwiches are small sandwiches that are curled up into a roll. Depending on the topping used, pinwheel sandwiches are very versatile; they’re great for afternoon tea.

Preparation Time: 60 minutes

  • 1 bread loaf 
  • ½ cup of tomato ketchup 
  • ¼ cup of mayonnaise 
  • 1 teaspoon of dried and crushed  red chillies

Method:

  1. Cut the fresh bread loaf lengthwise in a sheet form. Trim off the crusts.

  3. Apply butter on one side of the bread. Spread the filling on the buttered side evenly. Roll the bread slowly taking care not to break it.
  4. Wrap in greaseproof paper and place in the refrigerator to set for 30-45 minutes.
  5. When set, remove the paper from the roll, cut it into two-centimetre-thick slices, arrange it neatly on a platter and serve.

10. Chicken Club Sandwich

Ingredients:

  • 200 grams of boiled and shredded boneless chicken 
  • 12 slices of brown bread 
  • 2 tbsp of mayonnaise 
  • Black pepper powder as required
  • 2 tsp of red chilli sauce 
  • Salt to taste
  • 2 tsp oil 
  • 4 eggs 
  • Butter as required
  • Processed cheese grated as required
  • Tomato slices as required

Method:

  1. Combine chicken and mayonnaise in a bowl. Mix well.
  2. Add pepper powder, chilli sauce, salt and mix well.
  3. Toast bread slices in a toaster.
  4. Heat oil in a non-stick pan. Crack eggs one by one in the pan and double-fry them. Remove from heat and set aside.
  5. Place two toasted slices on a worktop. Spread butter on one side of each toast and spread the chicken mixture on one of them. Cover with another toast, place 2 tbsp of grated cheese and 4-5 tomato slices on top. 
  6. Sprinkle pepper powder on top and place a fried egg on it. Sprinkle a little salt and pepper powder on the fried egg. Butter the third toast and place it over the egg. 
  7. Press and cut into triangles. Similarly, make the remaining sandwiches.
  8. Serve with potato chips and tomato ketchup.

11. Cheese Sandwich

  • 2 500-grams chocolate sponge cakes 
  • 1-litre vanilla ice cream 
  • Malted chocolate powder 
  • Chocolate sauce

Method:
