1. Stuffed Mushrooms

Ingredients:

  • 200 grams of button mushrooms 
  • 2 tablespoons of garlic cloves (minced)
  • â…“ cup onions (chopped)
  • 2 tablespoons capsicum (chopped)
  • Mozzarella cheese
  • 2 tablespoons butter 
  • Olive oil 
  • Salt 
  • ½ tablespoon coriander leaves (dhaniya)
  • Turmeric powder (haldi)
  • 1 teaspoon coriander powder (dhaniya)
  • 1 teaspoon chilli powder 

 Method: 

  1. Sauté butter in a pan along with garlic, onions, capsicum and cook for a few minutes. 
  2. Then add the mushroom stem, salt, coriander leaves and all the spices. 
  3. Cook well and let it cool. 
  4. Now, brush the caps of the mushrooms with olive oil and fill each mushroom cap with the veggies stuffing.
  5. Preheat the oven at 180-degree Celsius for about 10 minutes and arrange the stuffed mushrooms on the baking tray 
  6. Grill it for about 5 minutes.
  7. Once done, top it with cheese and grill it once again for 2 minutes. 
  8. Stuffed mushrooms are ready to serve.

  • ¾ cup mushrooms
  • ½  tablespoon garlic

  • 2 cups of water

Method:

  1. Heat a non-stick pan and add onions, garlic. Sauté it well.

  4. Now, take a cup of water and dissolve the taco seasoning in it. 
  5. Add this mixture to the rice and cook it for about 15 minutes.

Ingredients:

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon garlic (minced)
  • ¼ cup onion (chopped)
  • 250 grams of button mushroom (chopped)
  • 1 tablespoon all-purpose flour (maida)
  • 1 teaspoon dried herbs
  • Salt
  • Pepper
  • 3 cups vegetable broth
  • ½ cup of heavy cream
  • 2 tablespoons coriander (dhaniya) (chopped)

Method:

  1. Heat a pan, add olive oil and sauté garlic and onion on medium-high heat.
  2. Then add the mushrooms and dried thyme. Let it cook for 10-12 minutes.
  3. Further, add maida and mix well.
  4. Next, add vegetable stock, salt and pepper and let the soup simmer for 15-20 minutes.
  5. Once the soup is cooled remove around 1 cup of mushroom from the soup and reserve it.
  6. Now, blend the remaining soup with a blender. 
  7. Add the reserved cup of mushrooms to the soup with the heavy cream.
  8. Cook it again and add parsley to it. 
  9. The piping hot cream of mushroom soup is ready to serve.

 4. Chicken With Mushroom Sauce

This mushroom recipe is a heavenly-tasting. Make it with barbequed chicken and mushroom sauce.

Ingredients:

  • 500 grams of chicken breasts
  • 7 garlic cloves (chopped)
  • 2 lemons juice
  • 4 tablespoons of oil 
  • Chives
  • 70 grams of dried mushrooms
  • 4 cups of chicken stock
  • 12 onions (chopped)
  • 75 grams of butter
  • 6 tablespoons of blackcurrant juice
  • Salt and black pepper
  • 750 grams of cream
  • Nutmeg powder (jaiphal)

Method:

  1. Marinade chicken, olive oil, garlic and lemon juice in a bowl for about 2 hours. Then, barbeque the chicken. 
  2. To prepare the mushroom sauce, place the mushrooms in a bowl and pour the chicken stock over it. 
  3. Cover the bowl and set it aside for 25-30 minutes. 
  4. Now, drain and squeeze out the liquid then chop the mushrooms and reserve the liquid. Set it aside.
  5. Take a pan and sauté garlic and onions in butter until golden. 
  6. Add the chopped mushrooms and sauté for about 3 minutes. 
  7. Gently add the blackcurrant juice to it.
  8. Boil it until it reduces to 2 tablespoons. Now, add the reserved liquid. Boil it again until reduced to 1 and 1/2 cups.
  9. Add the cream, salt, pepper, nutmeg to it. Mix it well.
  10. Pour the mushroom sauce over the barbequed chicken and garnish it with chopped chives.

  • 2 teaspoons unsalted butter

  3. Add salt to taste. Stir-fry till it releases some juices.
  4. Once softened, add the lime juice and turn off the heat.

Ingredients:

  • ½ kg white mushrooms 
  • 2 tablespoons ghee 
  • 1 large onion 
  • 2 teaspoons ginger
  • 2 teaspoons garlic
  • ¾ cup tomato puree
  • ½ teaspoon turmeric (haldi)
  • ½ tablespoon Kashmiri red chilli powder 
  • ½ to 1 teaspoon garam masala
  • 1 teaspoon salt
  • â…“ cup cashews
  • 1 tablespoon dried fenugreek leaves (methi)
  • Coriander leaves (dhaniya)

Method: 

  1. Take ½ cup of warm water and soak cashews in it for 10 minutes.
  2. Drain the water and blend the cashews with approximately ¼ cup of water.
  3. Heat a pan and sauté ghee, onions and cook for 3 to 4 minutes.
  4. Add ginger-garlic paste, tomato purée, turmeric, red chili powder, garam masala and salt.
  5. Now add the mushrooms to it and cook it for about 10 minutes.
  6. Now add dried fenugreek leaves, cashew paste and chopped coriander.

  • 1 cup basmati rice

  • 1 medium tomato
  • 1 tablespoon ginger garlic paste

  • ¼ cup yoghurt (dahi)
  • ¼ cup mint (pudina)
  • 2 tablespoons coriander leaves (dhaniya)
  • 1 ½ cups of water
  • 2 tablespoons oil or ghee
  • Salt
  • ¼ teaspoon turmeric powder (haldi)
  • ½ teaspoon red chilli powder
  • ½ teaspoon coriander powder
  • 1.5 teaspoon biryani masala
  • ½ teaspoon cumin seeds (jeera)
  • 1 bay leaf
  • 1-inch cinnamon stick
  • 2-3 cloves
  • 2 cardamom
  • 1 star anise

Method:

  1. Heat a pressure cooker and add oil, spices, ginger garlic paste and sauté for 30 seconds.
  2. Add onions, green chillies, tomatoes and sauté for a minute.
  3. Now add turmeric, red chilli powder, coriander powder and biryani powder and yogurt to it. Mix it well and sauté again.
  4. Add the mushrooms and rinsed basmati rice, water and salt.
  5. Sprinkle pudina and coriander leaves and mix them well.
  6. Close the cooker lid and cook it till 3 whistles.

  • 1 whole-wheat pizza dough

  1. Take a bowl and add all the ingredients along with â…“ cup water for making a smooth batter.
  2. Heat oil and dip the mushrooms in the batter & deep-fry them until golden brown.
